Ippodo's shincha crop is now growing under the clear blue sky in tea fields on the mountain slopes outside Kyoto. Absorbing lots of sunlight, the young buds are accumulating a distinctive grassy fragrance. It is this highly prized characteristic that Ippodo demands of its shincha tea.
Due to the delicate, ephemeral nature of this tea, it is handled very differently than our other tea products. Ippodo only sells shincha for two months out the year and only stocks a limited amount. And, because the timing of its picking determines when it can be shipped, the soonest it can reach customers is mid-May.
